Are always looking for new recipes for my breakfast …. I came across this and I was conquered … try it and you will not regret !!!!!


(for a 20x30cm baking pan)

Granulated sugar 17 gr
00 flour 200g
Powder 1 teaspoon baking powder
170g softened butter (for greasing the pan to taste)
3 whole eggs and 1 egg yolk
Vanilla seeds of a berry (or 1 teaspoon of vanilla extract and 1 teaspoon of vanilla extract)
1 pinch salt
For the layer of fruit
pears 200g
Lemons (juice of 1 to keep the slices of pear)
raspberries 170g
For the crumble
00 flour 75gr
Almond flour 75gr (or coconut flour)
Brown sugar 75gr
Cold butter 75g
Salt 2 large pinches
Lime (zest of 1 untreated)


Rinse under running water and towel-dried raspberries with paper towels.
Halve the pears, peel them to cut them into slices about 1 cm thick.
Transfer the slices of pear in a bowl and sprinkle with lemon juice to prevent blackening.
In a bowl, pour the butter into small pieces and add the sugar, processed ingredients with an electric mixer or a planetary to creamy smooth and homogenous.
Take the vanilla bean, incidetela and remove the seeds to add to the mixture.
Then continue adding to the eggs too: before the 3 whole eggs one at a time, continuing to mix until mix them thoroughly, then paying even the yolk.
Knead the ingredients until a smooth cream, add flour and baking powder.
Mix together with a spatula.
Then butter a baking dish 20×30 and line with baking paper, pour the mixture into the pan, leveling hand in hand with the back of a spoon lightly moistened with water, until all of the dough, add the pears drained from lemon juice , arranging them regularly along the surface of the dough cover them with raspberries.
Prepare the crumble. In a small bowl mix the butter very cold with brown sugar, flour, sifted 00 and the ground almonds.
Then grate the zest of lime directly into the bowl and stir quickly with all the tips of dita.Trasferitelo rain on the cake and bake in preheated oven at 180 degrees for about 60 minutes (160 degrees for 50-55 minutes if convection oven) .
When the layer of crumbs will be slightly golden, your cake will be baked and ready to be enjoyed.
Serve cut into squares.
